Our salts are 100% natural and rich in iodine and trace elements. They are produced and harvested by hand, wind-dried in the sun, and classified by vintage. Our fleur de sel, our beech-wood smoked fleur de sel, and our grey coarse sea salts are acclaimed for their flavors by award-winning chefs and food critics alike. Our fleur de sel has “a subtle hint of violet” that “beads effortlessly on fresh vegetables.” Our smoked fleur de sel “transforms scallops, fish, and meats” and “awakens the palate by enhancing tastes.” Our grey coarse sea salt is “without equal in a bouillon soup or scattered over sea bass” and “a single grain could even give the depth of an ocean to an oyster.”

Our history began in Bourg de Batz, capital of salt in the land of Guerande since the Middle Ages. It is said that my ancestor Georges Binet, wigmaker and confidant of Louis XIV, was the first to introduce sea salt flakes to the court of Versailles. In my family, made noble in 1718, the legend is still passed down of this exceptional fleur de sel:

“Salt of the king, crystallized in the marshes of Bourg de Batz, never blended, never milled, and born of the wind from the east.”

HISTORY IN THE MAKING

Like caviar or wine, salt is the opposite of a generic product: it is unique. Wrought by the winds, the sun and the work of the salt worker. We have inherited this ancestral french savoir-faire and we are proud of it. It is transmitted from generation to generation in Bourg de Batz, historical salt capital in the county of Guérande. Nothing is left to hazard.

From the choice of our sites to the drying of the salt by the winds, we observe, taste, select at every step to refine the best products and give birth to our CRU & GRAND CRU DE BATZ. The best of salts indeed doesn't become a CRU & GRAND CRU DE BATZ without the peculiar attention given at every step of the production.

NATURAL SEA SALT

For centuries, the gesture and the salt have remained the same. Batz Sea Salts contains many nutrients that are essential to our health, including iodine and other trace elements – Chlorine, Sodium, Sulfate, Magnesium, Calcium, and Potassium, to name a few...

VINTAGE SALTS

Sea salt is a source of minerals that requires attentive craftsmanship. Its natural richness dissipates slowly over time. The humidity of the salt is essential – within it is preserved all of its virtuous qualities, including iodine, trace elements, and the smoky character of our smoked fleur de sel.

In order to preserve their freshness, our sea salts are packaged in opaque, airtight tins.We are the only producer to have created special vintages. Each container is specially numbered.
